辣咖哩炙羊排 Spicy Curry Grilled Lamb Chops

材料 Ingredients
小羊排(8骨) Rack of Lamb (8 bones)2 個 ea
食用油 Cooking oil 少許 little
辣咖哩醃料 Spiced Curry Rub 1 份 portion

做法
1.將小羊排順骨頭切開變成帶骨的小片。
2. 辣咖哩醃料 準備好。
3.將羊排用咖哩醃料醃至少1 個小時
4. 烤盤燒到非常熱後刷上少許油。
5. 將羊排放上烤盤用中火炙3 分鐘﹐翻面後再用中火炙烤 3 分鐘即可裝盤。這樣的羊排大約是 8 分熟。食用時佐以 烤抱子甘藍和冬南瓜 羅勒葉油



PROCEDURE
1.Cut the lamb in between bones into small pieces, each piece with one bone.
2.Prepare the Curry Marinade.
3.Marinate the lamb with the Spiced Curry Rub for at least 1 hours.
4. Preheat a grill pan until it is very hot then brush some oil on the pan.
5. Grill the lamb chops over medium heat for 3 minutes. Turn them over and grill for another 3 minutes. The lamb is medium done. Serve with Roasted Brussels Sprouts and Butternut Squash and Infused basil oil
